Step 1: Prepare the Ingredients
- Chop the vegetables: Peel and dice the potatoes, chop the onion, and mince the garlic.
Step 2: Combine in Slow Cooker
- Add to slow cooker: In your slow cooker, combine the diced potatoes, broccoli, onion, and garlic.
- Add broth: Pour in the vegetable or chicken broth, and season with salt, pepper, and thyme if using. Stir to combine.
Step 3: Cook
- Cook on low: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.
Step 4: Blend and Add Cheese
- Blend: Once the soup is cooked, use an immersion blender to puree the soup to your desired consistency. If you don’t have an immersion blender, carefully transfer batches of the soup to a regular blender.
- Add cream and cheese: Stir in the heavy cream (or half-and-half) and shredded cheddar cheese until melted and well combined.
Step 5: Serve
- Garnish: Taste and adjust seasoning if needed. Serve hot, garnished with fresh chives or parsley if desired.
