Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

Step 2: Season the Chicken

  1. Place the chicken breasts on a large plate.
  2. Drizzle the 2 tablespoons of olive oil over the chicken and rub it in to coat evenly.
  3. In a small bowl, combine the garlic powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Sprinkle this seasoning mix evenly over both sides of the chicken breasts.

Step 3: Prepare the Vegetables

  1. In a large mixing bowl, add the zucchini, red and yellow bell peppers, red onion, cherry tomatoes, and baby carrots.
  2. Drizzle 1 tablespoon of olive oil over the vegetables. Add the salt, black pepper, oregano, garlic powder, and Italian seasoning.
  3. Toss the vegetables well until they are all evenly coated with the seasoning.

Step 4: Arrange Chicken and Vegetables on the Baking Sheet

  1. Place the seasoned chicken breasts on one side of the baking sheet.
  2. Spread the seasoned vegetables on the other side of the baking sheet, ensuring they’re in a single layer for even roasting.
