Instructions
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
Step 2: Season the Chicken
- Place the chicken breasts on a large plate.
- Drizzle the 2 tablespoons of olive oil over the chicken and rub it in to coat evenly.
- In a small bowl, combine the garlic powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper. Sprinkle this seasoning mix evenly over both sides of the chicken breasts.
Step 3: Prepare the Vegetables
- In a large mixing bowl, add the zucchini, red and yellow bell peppers, red onion, cherry tomatoes, and baby carrots.
- Drizzle 1 tablespoon of olive oil over the vegetables. Add the salt, black pepper, oregano, garlic powder, and Italian seasoning.
- Toss the vegetables well until they are all evenly coated with the seasoning.
Step 4: Arrange Chicken and Vegetables on the Baking Sheet
- Place the seasoned chicken breasts on one side of the baking sheet.
- Spread the seasoned vegetables on the other side of the baking sheet, ensuring they’re in a single layer for even roasting.
