Step 1: Preheat the Oven
- Preheat: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Melt the Chocolate
- Melt chocolate and butter: In a microwave-safe bowl, combine the semi-sweet chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Step 3: Mix the Cookie Dough
- Combine sugars: In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
- Add chocolate mixture: Pour the melted chocolate mixture into the sugar and egg mixture. Stir until fully combined.
- Add dry ingredients: In another bowl, whisk together the flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.
Step 4: Shape the Cookies
- Scoop dough: Using a cookie scoop or tablespoon, scoop out the dough and place it on the prepared baking sheet, leaving space between each cookie.
- Add extra chocolate: Press a few extra chocolate chips into the center of each cookie dough ball to enhance the gooey center.
Step 5: Bake
- Bake cookies: Bake in the preheated oven for 10-12 minutes. The edges should look set, but the centers will remain soft and slightly underbaked.
- Cool slightly: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
Step 6: Serve
- Enjoy warm: Serve the cookies warm to enjoy the gooey chocolate center. They pair wonderfully with a scoop of vanilla ice cream!
