INSTRUCTIONS:

st Step – Start by heating your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan with parchment paper, leaving an overhang on the longer sides.
nd Step – In a large mixing bowl, beat the eggs and sugar together until thick and pale. And In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the egg mixture, mixing until just combined.
rd Step – Fold in the grated carrots and chopped walnuts (if using) until evenly distributed throughout the batter.
th Step – Spread the batter evenly into the prepared jelly roll pan, smoothing the top with a spatula to ensure an even layer. Bake in the preheated oven for 12-15 minutes or until the cake is set and lightly golden brown.
th Step – While the cake is baking, prepare the cream cheese frosting filling. In a mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
th Step – Once the cake is baked, remove it from the oven and let it cool in the pan for a couple of minutes. Carefully lift the cake using the parchment paper overhang and transfer it to a clean kitchen towel dusted with powdered sugar.
th Step – Starting from one of the shorter ends, gently roll the cake and towel together into a tight spiral. Place the rolled cake seam-side down and let it cool completely.
th Step – Once the cake has cooled, carefully unroll it and spread the prepared cream cheese frosting evenly over the surface, leaving a small border around the edges.
th Step – Carefully re-roll the cake, this time without the towel, starting from the same end as before. Use the parchment paper to help lift and guide the cake as you roll.
th Step – Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to firm up the filling.
th Step – When ready to serve, unwrap the cake and trim the ends for a clean presentation. Dust with powdered sugar if desired. Slice the Carrot Cake Roll into rounds and serve chilled. Enjoy the heavenly combination of moist carrot cake and creamy cream cheese frosting in every bite!
This Carrot Cake Roll with Cream Cheese Frosting Filling is a delightful twist on the classic dessert, perfect for any gathering or celebration. Enjoy the compliments as your friends and family savor each delicious slice!
